Baked Beans & Salt Fish

This is a good, tasty economical breakfast item often found in the downtown area of Kingston, Jamaica. It usually is eaten with boiled green banana, yellow yam & dumpling. Crumbled bacon has been added here to give an extra dimension.

Ingredients

  • 1 – 13.8 Oz Swiss Tetra Pak Baked Beans inTomato Sauce
  • 5 Oz Boneless Salted Cod or Pollock (about3 small pieces)
  • ½ Onion small diced
  • 1 Plum Tomato large diced
  • ½ Clove Garlic chopped
  • 1 Small Sprig of Thyme, leaves only
  • 1 Small piece of Scotch Bonnet Pepper
  • Salt & Black Pepper to taste
  • 2 Tbsp Olive Oil
  • 2 Strips of bacon

Notes

PREPARATION
In advance of cooking, wash the heavily salted fish under running water well several times then place in a bowl of water to soak for 15 minutes, repeat this 3 more times. In a small pot boil some water, lower to simmer and drop the washed and soaked fish in for 2 minutes, drain, remove, break into small chunks and set aside.
While soaking the salted fish above, dice the washed onion & tomato, slice the Scotch bonnet pepper & strip the leaves off the sprig of thyme, set aside.
Open your tetra pak baked beans, set aside.
In a small frying pan on high heat as soon as hot, add your oil, when sizzling, add your onion and tomato and saute quickly moving it around until the onions are just translucent. Turn the heat down to medium and add the garlic, thyme & Scotch bonnet pepper, incorporate then add the salted fish pieces, stir quickly without breaking up the fish too much. Add black pepper & salt to taste. Remember the fish still has some salt in it so be careful not to add too much salt, you may not even have to add any. Lastly, add Baked Beans mix in just enough on low heat. Prepare your strips of bacon to crisp. You are now ready to plate the Baked Beans & Salted Fish, crumble the bacon and sprinkle on top.
SERVING SUGGESTION
If you don’t have boiled green bananas, yellow yam or flour dumpling these are some options:
Serve with Carib Festival. The mix is available in 16oz pouches and all you need to do is prepare as instructed on the packaging by adding water, kneading lightly, rolling in a cigar shape, stretching, resting a few minutes then frying in a separate frying pan until golden brown.
You may also serve with garlic bread made from a ciabatta roll as in photo for those living outside of Jamaica with access to this product.

Ingredients

  • 3 lbs Boneless Saltfish (bacalao): Soaked overnight and flaked
  • 1 large Onion: chopped
  • 1 stalk Escallion (green onion): chopped
  • 2 plum Tomatoes: chopped
  • 1/2 Scotch Bonner Pepper optional
  • 1 can Carib Ackee: drained
  • 3 tbsp Ground Thyme
  • 3 strips Bacon: fried crispy optional
  • 2 springs Thyme
  • 3 tbsp Cooking Oil
  • 1 tbsp Carib Ground Black Pepper

Instructions

  • Saute vegetables in oil.
  • Add flaked saltfish and cook for 2 minutes.
  • Add rinsed Carib Ackee.
  • Add black pepper and thyme.
  • Simmer for 10 minutes.
  • Garnish with crisp bacon and fresh tomatoes.
