Miss Birdie Easter Bun

Easter is approaching and the first thing that comes to mind is Miss Birdie Easter Bun, the seasonal favorite by far. Moist, fruity, spiced to perfection,  waiting to be devoured with your favorite cheese or butter by the entire family. A Jamaican tradition which has spread throughout the English-speaking Caribbean and anywhere in the world a Jamaican immigrant population exists, North America, Canada, the  United Kingdom & beyond.
The bun is an off shoot of the Hot Cross Bun from Jamaica’s  British colonial period. Like many Jamaican food items,  some ingredients were changed or added to make something similar and accessible  to the local population  and adapted to their tastes.
The among the main ingredients are: Flour, Brown Sugar, Preserved Fruits, Raisins, Vegetable Shortening, Yeast, Cinnamon, Nutmeg, Vanilla Flavoring. The rest is a secret.
Carib is the sole distributor of Miss Birdie Easter Bun and Whole Wheat Crackers in Florida. Products are available at many of their customers throughout the state and other areas.

Ingredients

  • 3 lbs Boneless Saltfish (bacalao): Soaked overnight and flaked
  • 1 large Onion: chopped
  • 1 stalk Escallion (green onion): chopped
  • 2 plum Tomatoes: chopped
  • 1/2 Scotch Bonner Pepper optional
  • 1 can Carib Ackee: drained
  • 3 tbsp Ground Thyme
  • 3 strips Bacon: fried crispy optional
  • 2 springs Thyme
  • 3 tbsp Cooking Oil
  • 1 tbsp Carib Ground Black Pepper

Instructions

  • Saute vegetables in oil.
  • Add flaked saltfish and cook for 2 minutes.
  • Add rinsed Carib Ackee.
  • Add black pepper and thyme.
  • Simmer for 10 minutes.
  • Garnish with crisp bacon and fresh tomatoes.
