Spicy Boston Bay seasoned Jerk pork paired with sweet guava glaze is super delicious. Serve over a bed of rice or with roasted potatoes.

Ingredients
FOR THE PORK

Pork tenderloin cut into 1 and 1/2 cubes

Eaton's Jamaican Boston Bay style Jerk Seasoning

Sweet peppers quartered, seeded and cut into squares

Red onion skwers soaked in water for 30 mins 1/2 of the glaze
FOR THE GLAZE

Eaton's West Indian Guava Jam

Soy Sauce

Eaton's West Indian Hot Mustard Sauce (or to taste) Divide the glaze equally into two containers.
Instructions
Seasoned the pork with the jerk seasoning and marinate for 2 hours or overnight.
Combine glaze ingredients and divide equally into two containers, one for brushing the skewers and one for serving.
Preheat grill.
Thread, sweet peppers, tomato and onion pieces alternatively on to skewers.
Brush each skewer with glaze and grill on both sides until pork is no longer pink in the middle let rest 5 mins. before serving.
Serve with the remaining portion of Guava glaze.
